Here we go again, day after Christmas and I'm headed back to work. Today we are refining the low wines from the stripping runs from this month, bringing 2018's rum production to an end. It has been a wonderful year at the distillery, we have learned so much about the still, fermentation and distilling.Looking forward to the new things that we are going to be trying and learning more and more about the process and the results of good procedure and new ideas. We are going to be allowed to create a few special release expressions next year and with some of the rum that we created in 2018.
Papa's Pilar and The Hemingway Rum Company has been quite the special experience for me for the past year and a half. Looking forward to the growth that we expect to be seeing in the next year of so.
