Dzama Finally Reaches Florida

     Three years ago I first ran across the Dzama (Pronounced "Zahm").   This rum won Gold in the 2011 Miami Rum Renaissance Festival and Silver the following year.   It wasn't until recently that the Dzama operation received their importation clearance to begin selling their fine rums here in America.

     The plant in Madagascar first opened in 1980, is especially clean, and
maintained that way to prevent the introduction of any unwanted molds that will naturally occur in the air where ethanol is being produced.   They use sugar cane that is produced in different areas of Madagascar to get the flavors from the came they are looking for in the rum.   Different yeasts for the different washes also effect the flavors.   There is a definite influence of the French in the agriculture of the island.   The rum is aged in Spanish Oak, American Oak  and new French Limousin Oak barrels from the Chivas Brothers Distillery, giving the blender more tools from which to create these wonderful flavors.

     This is a very smooth rum boasting aromas vanilla and subdued aromas of oak, fruit, and a bit of alcohol.  On the palate it takes on the taste of a flavored or spiced rum, but the makes of Dzama Cuvee Noire Prestige insist there are no artificial or additives in their rhums.   Almost hard to believe with the strong flavors that are there.   The vanilla is the final taste that you notice in the finish.

     Having just arrived this week, the Dzama Cuvee Noire Prestige is moving well and is fast becoming a new favorite among the customers.  I find it to be an honest and great tasting rum that I am proud to be able to add to the Rum Bar Key West collection.   ;o)

The Results are In: 2012 Rum XP International Tasting Competition

   The final results for the 2012 International Tasting are in and there were so many great rum in the competition this year.   All of the Rum XP's spent a lot of time over three days evaluating these rum and we hope that you all enjoy them as much as we did.    This is a competition that is held in high esteem and it is an honor to be a part of it and an honor to have been a part of the panel.   ;o)

The 2012 RumXP International Tasting Competition was held at the Deauville Beach Resort on Miami Beach April 18 to 20 as part of the Miami Rum Renaissance Festival.
More than 25 members of the International Rum Expert Panel participated and more than 100 of the finest rums in the world were presented for evaluation.
The RumXPs were sequestered in their tasting room for three days of blind tasting trials. The rums were grouped and judged in categories of white, gold, aged, old aged, premium aged, dark, spiced, flavored and overproof.
Their collective expertise as a group of judges is unrivaled in the spirits world. Their combined experience spans many dozens of countries and hundreds of brands. They are authors, lecturers, trainers, historians, journalists, consultants, collectors, proprietors, mixologists and promoters of rum.

Rum Renaissance Day 4: Big Parties and Many Briefings

   The morning starts with another rum breakfast with Tiki Lovers Rum from Germany as the host.   They are offering a white and dark rum for their initial offering.     They are also well known for their syrups and liqueurs.     Though these rums are not available here in the United States right now, they are working toward getting them here in the near future.    The white rum is a normal 80 proof, but the Dark is a bold 114 proof and will be a great rum for "tiki" style drinks.    Guess what it was another overproof breakfast, seems that every morning starts with the breakfast for the serious rum lover.    The company is working hard to produce their "niche" products filling a need for products that are not readily available.   Looking forward to the day when their products will be available here in the states.

     Next it was back to the judging room for round three of the six scheduled for the week.   Age dated premium rums and spiced rums are the subject for session three.

     Lunch was with a new product from Tico Libre.   It was to introduce their new low calorie rum and cola in a can.   They had us tasting two different versions of the product that I feel has really good sales potential.   Bradley Tuyn, Luyen Nguyen, Leonardo Salazar, Chris Dods, and Michelle Prue make up the management team and are working hard to launch this new product here in the states.     Libre is the name of the low calorie rum and cola in a can.    It sports a good quality rum and a cola taste made from a natural ingredient cola formula of their own.   Look for it soon in your area, a six pack in your cooler instead of beer, just perfect for the tail gait party.

     This day just doesn't want to slow down as we head back to the judging room for session four.   Aged rums and overproof rums are the subject of the last session for today.    After the conclusion of session four there was time for a few minutes at the pool before going to the Dzama briefing.

    Dzama or "ZAM" as it is actually pronounced is being offered for the first time in the United States within the next month or so.   This award winning line of rums is made in Madagascar, and is very unique in its flavor and aroma.  They are introducing a full line of rums including a vanilla flavored rum that actually has a vanilla bean in the bottle.   This is a welcome addition to the international flavor of rum these days.

     Finally it is party time!!!!   First it is off the the 8th floor of the Soho Beach Resort and the Brugal Party.   Brugal has a fine line of rums that cover the range of white to their fine aged flagship "Brugal 1888".     Their party showed the same attention to detail and fun as does their rum.   I've found a new liking for the clear rain coats and umbrellas.     The new president Paul Ross was present at the party and I believe will be addressing us at lunch today.     Anyway back to the party, great music, drink and apps kept it lively and enjoyable for all of us.    The atmosphere of the roof top garden made the party even more spectacular.

       Just when you are thinking that it can't get any better it is on the bus and off to Coral Gables and the Bacardi Penthouse for the final party of the night.     This is a very special one because it is part of the Bacardi 150 year celebration.     As usual, the elegance of the penthouse hospitality and museum area make the party a wonderful experience.    The XP's were asked to join a special tasting of some new products and to offer opinions as to which way Bacardi blenders might want to go on the products.   Always the highlight of the event for the XP's.     Pretty models to be photographed with really adds to the glamor and atmosphere of the event, not even mentioning the food and drink.     All of the components are there and the party was a complete success and the party was enjoyed by all.


     The day has been a very long one with a lot of rum that "had to be consumed", and it is time to get back to the hotel and  a little bit of sleep before it starts all over again tomorrow.   Friday is another full schedule and I need to get my strength up  to meet the challenge of another day of Miami Rum Renaissance Festival activities.   ;o)

Today is National Rum Day















     Today is National Rum Day, so I decided to stick my neck out a little bit and let you know a little about some of my favorite rums that are available in America.  I get the opportunity to enjoy so many rums, but many of them are just not available here in the United states.  I thought for National Rum Day, I’d try to pick my top ten.  These are not in any particular order, but they are the ten that I tend to gravitate toward and enjoy on a regular basis.



 

Doorly’s XO is a blend of six to ten year old rums created and aged by Richard Seale at the Foursquare Distillery in Barbados, Doorly's XO gets its final finishing in an Oloroso Sherry cask.   The rum has a deep copper bronze color with golden highlights.  In the mouth, the viscosity is somewhat light, This rum contains no additives of any kind.   There is an initial spiciness that dies down quickly revealing a fruitiness, that is coupled with oaky tannins that coat the palate and a hint of sweetness.  The long finish is primarily spice and oak, and finishes with just a slight bitterness.  Wonderful in a glass or mixed in premium cocktails.


Mount Gay Black Barrel is a small batch, handcrafted rum recently created by master distiller Allen Smith. It is a blend of both matured double pot distillates and aged column distillates which are finished in Bourbon oak barrels. This blend has a bold and balanced flavor, that is not to sweet as what the nose would have you think.  The flavor of the oak comes to the front over the palate, there are notes of orange, banana peel, almonds, baking spices and vanilla.  This is a good sipper or mixing expression

Abuelo Oloroso Sherry Cask Finish is their wonderful 12 year-old rum that has been rebarrelled in Oloroso Sherry casks for another 5 years.  This process adds to the already wonderful flavors of the original rum, yielding a brilliant copper color with complex aromas and flavors of polished wood, leather, sherry raisin cake, and dark roasted nuts.  This is a vibrant, fruity full bodied rum with a warm distinctive notes of fruit cake, spiced prunes and figs with some tea and tobacco in the finish.
This  one is a pure sipping rum.

Afrohead Premium Aged Dark Rum is born in the West Indies and authentically aged, sporting a silky smooth spirit with notes of toasty oak and a hint of honey. The rum has notes of molasses and Bourbon wood accents with a hint of vanilla with a smooth, warming, long finish. It is authentically crafted with blends of rum aged 7 years or older in once-used Bourbon barrels.  Also a rum that can be sipped or used in premium cocktails.

Diplomatico Reserva Exclusiva has a heavy, rich, toasted sugar flavor, with a rich and buttery hint of spice.  Revealing a medley of flavors that include caramel, allspice, almonds and molasses, vanilla and leather that come together ins such a wonderful manner. It is a very viscous medium-bodied rum that the flavor seems like it will never end.   This is definitely a rum that is worth spending time with as a sipper especially great with a fine cigar.
Cartavio XO has a brilliant mahogany color with woody aromas furniture shop.  There are notes of tropical fruit, leather, cinnamon, tannins, crisp, caramelized nuts, mango, orange caramel with a vanilla bean and nutmeg finish.  This is a very rich aged rum that suits palates that prefer sweets rums.  Another that can be used as a sipper or for mixing premium cocktails.
Dzama Cuvee Noire is one of a very few that can boast such a balance of flavors that are achieved by this rum.  You will find the notes of orange, vanilla, coffee liqueur, citrus and bananas as you sniff and taste this unique rum from Madagascar.   This oak barrel aged rum is filled with character and flavor that are unique to this rum.  Sip it or mix it you will enjoy this one.

Damoiseau XO has a golden amber color, with a rich, complex, oaky aromas, with flavors of chocolate, dried banana and mango, and some notes of spices and fruitiness.  This Agricole Rhum has a light-medium body with a smooth, subtle, medium-length satisfying finish.   A very smooth and elegant sipping rum that is absolutely my favorite Agricole..

Plantation Barbados 5 Year Grande Reserve has a light sweetness in the mouth with hints of butterscotch, caramel and molasses initially across the palate with some sweetness followed by a sharp orange peel and baking spices like cinnamon, cloves, nutmeg and vanilla along with a leathery mustiness.  Other flavors like banana and marmalade, toasted almond, charred coconut and notes of marzipan.  This is a unique rum that can be enjoyed across the spectrum, it works well in anywhere.

Papa’s Pilar Dark Rum has an aroma of molasses, baking spices and hints of caramel.  The flavor is sweet initially, with lots of vanilla, caramel, and citrus that melt away to a pepperiness at the back of the tongue.  It finishes on the dry side, medium-long, and slightly astringent, with the influence of the Oloroso sherry finish coming to the forefront.   This is unique in that gets its flavors not only from the selection of fine rums, but also what is gained from the solera blending method.   Papa’s Pilar is bold and works well as a sipper or a a replacement for bourbon in many of the classic cocktails.

An Italiam Style Daiquiri

     There are a lot of combinations of liquors and mixes out there that end up being cocktails, but there are only a few combinations that end up being great daiquiries,   Here is an idea for one that dmight be able to become one of your all time favorites.  There are so many combinations that are called daiquiri, but this one might be one that you put dinto your cocktail notebook to pull up every now and again.



Bahama Bob’s “Italian Style” Daiquiri 
  • 2 oz. Dzama Dark Rum
  • ½ oz. Amaro de Toscana
  • 1 oz. Lime Juice
  • ¾ oz. Orgeat

Place all ingredients into a shaker filled with ice and shake until chilled, strain into a cocktail glass filled with fresh ice and garnish with mint sprigs.
